#cornbread
We used wholegrain white corn flour and added some plain flour as well to make them extra soft.
Ingredients
1 1/4 cup wholegrain white corn flour
1/2 cup white flour
2 eggs
1/2 greek yogurt
1/3 cup olive oil
100g feta
100g spinach (fresh or frozen)
1 1/2 teaspoons baking powder
1/2 salt
Directions
Combine all dry ingredients together. Add crumbled feta and mix through.
In a separate bowl whisk the wet ingredients. Add the wet ingredients to the flour mixture and stir until just combined. Fold in the spinach gently. S
poon the mixture into a muffin tray (use baking cups) and bake for 20 minutes on 200.
