In a bowl, put 300 grams of plain flour, 2 tsp. baking powder, 1 tsp. cocoa, 2 eggs, 50 g granulated sugar, 1 tsp. gl. vanilla extract or 1 vanilla pod, a pinch of salt, 100 ml melted butter, 250 ml sour milk and a small amount of red pastry color in paste or gel form, with the help of a toothpick until you see that it has become quite red. Mix the mixture well with the egg beater and set aside for 10 minutes.
If you use liquid paint, you will put about 1 tsp. but watch me! Not from the colors that are available in supermarkets in a pack of 3 (red, yellow, blue) because they color the mixtures very softly and when baked they discolor slightly, so you won’t get the crimson effect you want in red velvet, even if you put all the vial. There are liquid colors in glass bottles in large supermarkets that do not lose their intensity during baking and a very small amount is enough, and of course you can find all types of colors in confectionery stores.
Butter the pan with the donut molds, even if they are non-stick or silicone, and fill them leaving 1/2 centimeter from their rim. For convenience, you can put the mixture in a pastry bag or in a bottle with a nose. Bake the donuts at 180 degrees for about 20 minutes. This amount makes about 20 small donuts.
You let the donuts cool slightly to garnish them with the cheese glaze. Before you start making the glaze you will take 2 of the donuts and crumble them to garnish the rest.
You mix 100 grams of cream cheese with 1/2 cup of powdered sugar, a few drops of vanilla extract and a few teaspoons of fresh milk until you have a thick glaze. Dip one side of the donuts in the glaze and sprinkle with the crumbs you created from the two donuts.
