Beat 2 eggs lightly and mix in 80 ml of sunflower oil (you can also add melted butter, but I tell you that the waffles become even fluffier with sunflower oil), 1 tsp. vanilla extract, orange zest, 2 tsp. sugar, 1 pinch of salt, 2 cups of milk and finally 300 g of self-raising or all-purpose flour + 1 1/2 tsp. baking powder. You mix well to have a mixture without lumps and leave it in the refrigerator covered for 30 minutes.
Lightly oil the surface of the waffle maker and after it is heated, put 3-4 tsp. of the mixture for each waffle. Bake according to the instructions of your device, about 4-5 minutes. Next time you don’t need to re-oil the baking surface.
You serve the waffles with whatever you like… Fruit, honey, ice cream, whipped cream, syrup, melted chocolate, crushed cookies, nuts…
You can create different flavors in your mixture according to your preferences… Here I suggest you add lemon zest and 1 tsp instead of orange zest. poppy seed! Serve with blueberries and a light icing with powdered sugar and lemon juice…
