The tangy aamli chutney and the spicy green chutney give it an amazing flavour tantalizing your taste buds.
METHOD
3 boiled potatoes mashed
In a pan heat 1 tblsp oil add 1 tsp mustard seeds and let it splutter then add 1 tsp sesame seeds and a few curry leaves. Then add 1 tsp green chilli paste and 1 tsp ginger garlic paste. Mix everything well and sauté.
Add 1 tsp salt and 1/2 tsp each of turmeric and coriander powder and 1/2 tsp dry mango powder if available. Mix everything well.
Add mashed potatoes and give it a nice mix. When cool add coriander leaves then make medium sized balls and keep aside.
Batter :
1 cup chana flour ( gram flour)
1 tsp salt
1 tsp red chilli powder
Pinch of hing ( asofaetida)
Add water and make batter. Dont make it too runny. Before frying add in baking soda and 2 tblsp of hot oil. Dip the balls in batter and fry.
Assembling :
Slice open a mini burger bun. Spread some butter then add aamli and green chutney add the fried vadas and toast on pan with butter before serving.
