INGREDIENTS
2 cups cake flour /all purpose flour
1/2 tsp salt
Pinch of nutmeg ( optional)
Mix the above well
In a cup mix together
3/4 cup warm water/milk
2 tbsp milk powder
2 tbsp sugar
1 tbsp instant yeast
Mix the above and cover. Let it stand for 15 minutes.
Now whisk into the yeast mixture :
3 tblsp melted butter
1 egg
METHOD
Make a well in the middle of the flour mixture. Pour the wet ingredients inside. Mix till well combined.
The mixture will be very soft and sticky. Dont add any flour at all. Transfer to a clean workspace and knead the dough with little for 10 minutes till it comes together and is no longer sticky.
Place 1 tsp oil around the dough , cover and let it rise till double in size.
Punch and roll on a floured surface.
Use a doughnut cutter and make sure they are 1/2 inch thick. Place onto baking/wax paper. Let it rise for another 30 minutes covered. Carefully cut around the edges of the paper without touching the risen dough. Place the doughnut with baking paper into the oil. Paper will come off easily.fry till golden brown then roll in sugar or coat with chocolate.
