( i mixed up a few recipes and came up with it)
Base:
1 packet tennis biscuit crumbs @bakersbiscuits
6 tblsp butter
Mix and pat down on a springform pan. Cover the edges with wax paper before adding the biscuit crumbs. Cover with cling film and leave in the fridge for 1 to 2 hours.
Filling:
1 cup cream cheese
1 cup whipped fresh cream
1/4 cup icing sugar
2 tblsp lemon juice
1 tsp strawberry essence
1/2 cup of strawberry puree( optional. I did not add as i wanted it plain)
3 tsp gelatine dissolved in 1/4 cup of boiling water
METHOD
Beat cream cheese with icing sugar then add fresh cream and the essence and lemon juice. Add dissolved gelatine and beat again.
Add it on top of the base and cover and let it set in the fridge for 2 to 3 hours. Prepare strawberry flavour jelly by following instructions on the box and add on top of the cream layer very carefully.
Cover and let it it set in the fridge. Open the pan from the sides and remove the wax paper. Top with strawberries or leave as it is.
