The dosage in tea cups is classic for a 30-quart pan and does not deviate from the logic of 1-2-3-4
It can be made with any of the three starches, I used nisete.
INGREDIENTS
1 fl. light olive oil or seed oil
2 fl. starch (starch or rice flour or corn flour)
3 fl. sugar (up to 4th if you have a sweet tooth)
4 fl. water (and 5th if we put 4 fl. sugar)
1/2 tsp. cinnamon
additional 1 fl. sugar for the candy and
roasted almonds, as much as we want
DIRECTIONS
Dissolve the starch and cinnamon in a bowl with half the sugar (1.5 fl.) and the water until they all dissolve and set aside.
I heat the oil and the rest of the sugar until it caramelizes and darkens as much as I want (make sure it doesn’t burn, I don’t leave it on top and play with the temperature if necessary) and as soon as it becomes a light caramel, I pour the starch mixture into the pot. I keep stirring with a wooden spoon. At first the caramel seems to set but don’t be afraid, it melts with stirring and the temperature of the pot.
We only use a wooden spoon and keep stirring until the halva comes off the sides of the pot.
I turn the contents in the pan, spread the mixture nicely with the spoon, sprinkle with granulated sugar and if I like cinnamon I pour some more on the surface and bake for 9 minutes in the oven grill at the highest temperature it has.
What I changed in the recipe is the oil, I put goat butter in half the amount and left the other half with seed oil because I was afraid it would be too heavy. Next time I will put the whole amount in goat cheese, it turned out perfect.
I take it out of the oven and let it cool down. Then I carve into pieces.
