These are banana and blueberry muffins, because we always have some ripe bananas around waiting to be used… *
Ingredients
1 cup white self raising flour
1/4 cups whole spelt flour
1/4 quick oats
2 mashed bananas
2 eggs
1/3 cup honey
1/3 cup olive oil
1/3 cup greek yogurt
1 cup blueberries
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
2 teaspoon vanilla essence
pinch of salt
Directions:
Mix all dry ingredients together. In a separate bowl whisk all wet ingredients and add to the flour mixture. Stir until just combined.
Gently fold in the blueberries. Distribute in a 12 cup muffin tray (I use paper cups). Bake for 25 minutes on 180.
