Guacamole recipe:
1 avocado
2 tablespoons mayo
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon sugar
1 teaspoon pepper
Blend till smooth
(I used ready made guacamole)
Chicken:
500 g Chicken fillet cubed
1Tablespoon Ghee
1 teaspoon garlic pepper
2 teaspoons lemon pepper
1 teaspoon coriander powder
1 teaspoon ginger garlic masala
1 teaspoon red chilli powder
1 teaspoon salt
1 teaspoon bbq spice
1 teaspoon chicken spice
1 teaspoon aromat
1 heaped teaspoon ground black pepper
1Tablespoon Lemon Juice
1Tablespoons Tomato Sauce
2 Tablespoons Mayonnaise
1 Tablespoon nandos Sauce
Small handful fresh coriander finely chopped up
METHOD
Heat ghee in a pot . Add in cubed chicken and spices and lemon juice , braise, Mix and cook well until all the water is gone, Finally add in the tomato sauce, mayo & other sauces and turn the heat off, add in the chopped coriander and give it a good stir.
Prepare your rolls by spreading some mayo as a base, then top with saucy chicken. On the top of the chicken add the Guacamole and the sour cream/or mayonnaise. Grate some cheese and stuff dorritos. Bake in oven until cheese melts.
