INGREDIENTS
2 large eggs
1 3/4 cups sugar
2 heaping teaspoons cinnamon
1/2 cup oil
5 or 6 medium apples (I used Delicious)
2 cups flour
2 teaspoons baking soda
METHOD
Preheat oven to 350 degrees F. In a large bowl mix eggs, sugar, cinnamon and oil. Peel and slice apples and add to mixture and coat so as not to turn brown. Mix together the baking soda and flour and add to the ingredients in the bowl.
Mix well – this really works good with a fork – until all of the flour is absorbed by the wet ingredients. Pour mixture into a greased 9 x 13 inch baking pan or two 9 inch round pans. I used the 9 x 13 inch pan.
If you use the 9 inch round pans just remember this does not come out easily (if at all). You may have to just slice in the pan. Bake for approximately 55 minutes. Check regularly….mine was done a little earlier. Top with fresh whipped cream, if desired.
