Parsi style mutton kebab

INGREDINETS
250 g mutton mince boiled ( mince should be dry)
4 to 5 potatoes boiled and mashed
4 tblsp fried onions
1 tblsp ginger garlic paste
1 tsp coriander powder
1 tsp zeera / cumin powder
1 tsp red chilli powder
1 tblsp green chillie paste
Salt to taste
1/4 cup breadcrumbs
1 cup of coriander and mint leaves chopped
DIRECTIONS
Mix everything well. Make sure the mince is dry after boiling. Add spices to taste. Shape into round kebabs and leave in the fridge for 1 hour.
Coat in flour , egg and breadcrumbs then fry. Serve with a yoghurt and mint dip or any chutney.
Tandoori mutton chops

DIRECTIONS
Wash and pat dry mutton chops and place in pressure cooker . Add 1 tblsp ginger garlic paste, 1 tsp turmeric and salt and pressure cook till 3 to 4 whistles. Let it cool then marinate in :
INGREDINETS
2 tblsp ginger garlic paste
1 tblsp tandoori masala
1 tsp cumin/ zeera powder
1 tsp coriander powder
2 tblsp yoghurt
1 tblsp paprika
1 tsp red chilli powder
2 tblsp lemon juice
Salt to taste
DIRECTIONS
Mix the marinade well then add in the chops. Rub the marinade nicely on the chops and leave to marinate for few hours. Fry in ghee or oil and serve hot.
Mutton karahi

INGREDINETS
500 g mutton cook in pressure cooker with little turmeric and salt. Keep aside
2 large onions sliced
2 tomatoes grated
1 tblsp ginger garlic paste
1 tsp each of the spices ( cumin, coriander, paprika, red chilli , garam masala)
1 tblsp shan karahi masala
Salt to taste
2 tblsp yoghurt
2 tblsp cream
Chopped coriander
DIRECTIONS
Saute onions in oil till brown then add in the ginger garlic paste and cook for 1 minute then add the tomato and spices and cook well. Add little water and keep stirring. Once oil comes up then add the yoghurt and the cooked meat. Mix and cover the pot and let it cook for 5 to 10 minutes. Lastly add cream and coriander and give it a final mix. Serve with naan or roti
