1 kg pork pans 4 pancetta 1 – 2 florin peppers 1 – 2 horn peppers 1 medium onion 1 glass of resin wine 1 garlic optional 2-3 lemon leaves optional 1 tablespoon mustard a stream a stream of thyme a stream a stream black pepper 4 tablespoons olive oil salt
Execution
Wash the pork pan, and the pancakes and cut them into small pieces. Put the lemon leaves in a saucepan and fill it with water until the meat is covered.

Once the water is saved with a slotted spoon transfer them to a pan after we have put the olive oil in and it has burned, sauté them on all sides, stirring gradually, add the paprika, mix 2 minutes and quench it with the wine.
As soon as the alcohol evaporates, add the mustard, the thyme, the pepper and the salt, stirring constantly and as soon as it gets a nice color, it is ready. Take it out on a plate and put oregano on top
