Season whole chicken with skin:
Olive oil
Little vinegar
Lemon juice
2 tsp red chilli paste
6 tblsp chillinaise/mayonnaise
6 tblsp any nandos sauce
2 tblsp chilli flakes
2 bay leaves
1 tblsp paprika powder
1 tblsp garlic
1 tblsp salt and pepper
1 pckt of the nandos mix bag&bake
Mix and let it marinate for the night.
METHOD
Next day take your chicken and put it in the oven with a bit of the marinade sauce, leave the rest of the sauce in a small pan.
(Note: I baked one chicken in the bag that comes on the packet and another chicken inside a pyrex dish. Found the one inside the pyrex was better because I could get the sauce that came out of the chicken while cooking)
Bake 230c until cook then grill it so it gets a nice colour and it is crispy on the outside and soft on the inside.
When cooked, take the chicken out and mix the sauce that came out from the chicken with the marinade sauce that was left in a pan and give it a boil.
Now brush or pour the sauce over the chicken.
Sweet potatoes nandos style
Cut sweet potato in wedges. Season with little olive oil, salt, aromat, origanum, paprika and bake until cooked. Serve with the chicken.
Nandos style rice
Wash and drain 1 1/2 cup rice
Add to a pot pan:
Olive oil
Chopped onion
Coloured peppers
Peas
1 tblsp salt
1 tsp pepper
1 tsp turmeric powder
2 tsp spice for rice
Add in the rice cook for 1 min then add 3 cups of boiling water
Cook until done.
Serve with the nandos chicken.
