It makes a great healthy school snack, whether school’s on or not…
Ingredients
1 cup white flour
3/4 cups whole spelt flour
2 mashed bananas
2 eggs
1/2 cup honey
1/3 cup olive oil
1/4 cup greek yogurt (heaped)
1/2 cup blueberries
2 teaspoons baking powder
1/2 teaspoon cinnamon
2 teaspoon vanilla essence
pinch of salt
chopped walnuts (optional)
Directions
Mix all dry ingredients together. In a separate bowl whisk all wet ingredients and add to the flour mixture.
Stir until just combined. Gently fold in the blueberries.
Top with banana and extra blueberries for a prettier looking loaf. Bake for about 55 minutes on 165.
