Ingredients for two large laganas
900 g sifted flour
100 g fine semolina
550 ml lukewarm water
2 dry yeast
100 g sesame
100 g seed oil
1 tablespoon balsamic
1 tablespoon salt
1 tablespoon sugar
2 ml tablespoons sesame sugar for sprinkling

1- step we make the porridge .
In a bowl we put 250 ml of lukewarm water not hot, 1 yeast, 1 tablespoon sugar, and mix with a whisk to melt the yeast and then add 250 g of flour let the porridge rest for about 40 minutes in a warm place .
2- step .
In another bowl add the 650 g of flour add the 100 g of semolina on 1 yeast and 1 tablespoon salt I recover well with a spoon. Then I throw it in 1 bowl – porridge after 40 minutes have passed. and I continue and add in 1 tablespoon of balsamic 100 g of sesame that I will beat very well with 100 ml of seed oil in the multi, mix them a little and add in 300 ml of lukewarm water. Knead them well, the dough will stick to our hands , so it should be .
Let it rest for about two hours in a warm place .
When the dough is ready, put on our counter a little semolina, knead very little for 2 minutes, having in hand puts a little seed oil in our hands, we divide the dough into two large lagana if you want smaller you will make four choices of your own. We place it in a pan that we have put oil glue and after we have put a little seed oil in our hands we open it with the palms of the size and thickness we want, we cover them with a film and we leave them for a quarter with about half an hour to rest.
in a warm place, and then with the three fingers we press our lagana continuously to make puddles in the whole lagana we pass it with a brush that we will have made, with the 100 ml of lukewarm water that we will have melted with 2 tablespoons of sugar , and then sprinkle plenty of sesame .
In a preheated oven I bake the lagana at 200 degrees air heat for 20 – 25 minutes one by one in the oven .
