this one is with drunken cranberries which gives it a distinctly adult taste. the recipe requires a lot of stirring but otherwise super easy to make and ideal to have on a cold day…
Ingredients
1 cup arborio rice
1/4 sugar
6 cups milk
1/2 cranberries
1/4 brandy/liquor
1 tablespoon butter
1 tablespoon light brown sugar
vanilla essence
Directions:
Heat the milk until hot but not boiling, add the sugar and vanilla. Soak the cranberries in brandy and put aside.
In another saucepan, melt the butter with 1 tablespoon of light brown sugar. Mix in the rice and cook stirring for 1 – 2 minutes.
Reduce the heat and add 1/2 cup of milk at a time, stirring constantly until all used up. Add the cranberries and the brandy half way through the cooking.
The pudding is done when the rice is tender but there is still plenty of liquid in the pot. You can enjoy them warm or straight out of the fridge!
