Couscous salad – you can use the couscous like rice or potatos to serve with some meat or chicken but really alone is delicious.

Ingredients

2 cups couscous
1 tablespoon  of oil
2 tablespoon of butter
salt and pepper
1 cup of raisins
3/4 cup of almonds in slices
1 teaspoon of chopped mint
1/2 cup of dates in cubes (optative)

Method

In a saucepan  put three cups of cold water
oil  the curry  butter  and salt and dates.


Bring to a boil over medium heat and add the couscous  and mix.
Remove from heat cover and let stand 20 minutes.
Stir a bit with a fork and add the raisins.

Place in a bowl and place the couscous cool aqnd  fluff with a forkand then  let stand before serving add almonds and mint.
Check the seasoning.
