Ingredients (4 servings)
1 dough recipe (see below)
(anyway you can use some freeze dough if you want)
3 eggs
4 tablespoons of ricotta
4 tablespoon of cream
4 tablespoon of mozarella cheese
4 tablespoons parmesan cheese
Fresh basil to put inside and garnish
4 tomatos slices
salt and pepper
Tartlets dough
200 grams all purpose flour
80 grams butter
1 teaspoon of salt
1 egg
a little cold water
method
Place in a bowl the flour, cubed butter and salt.
Working with a fork mix the ingredients until you have a crumble dough like sand.
Add the egg and cold water.
Mix well until a smooth dough. (if needed you can add more flour)
Wrap in plastic film and refrigerate for 30 minutes.
Use following the recipe.
Make the caprese tartlets
Roll out the dough on a floured surface and cut 4 discs of dough depending if use ramekins or molds like these tarts.
(These disks of dough can be frozen without problem (put spacers between each) last two months)
Cover the pans with foil over the dough and putting up some beans.
This prevents the dough out of shape during cooking.
Place in the oven at 180 ° C for about 10-15 minutes. Remove the paper and beans and set aside.
Filling
In a bowl mix the eggs with the ricotta, cream, cheese and some chopped basil.
Season with salt and pepper.
Fill the tart shells with this mixture and add a slice of tomato in the center.
Back to oven (180 °) for about 18 minutes.
They will be lightly browned and slightly up.
Serve warm or hot.
Garnish with basil.
