A cool spring salad that can accompany a meal with meat or fish but can also stand as a complete meal on its own.
On a plate, place 200 g of baby spinach leaves, 10 cherry tomatoes cut in half, 5-6 strawberries in slices, 2 slices of fresh pineapple cut into pieces, 20 blueberries and mint leaves. You add 150 g of cubed feta cheese or anthotyro. You mix 1 tsp. mild mustard, 3 tsp. olive oil, 1 tbsp. apple cider vinegar, salt and pepper. Pour over the salad and serve immediately.
