INGREDIENTS
1/2 kg boneless mutton pieces
Marinate for 30 minutes in:
1 tsp meat tenderizer
1 cup whisked yoghurt ( room temperature)
1/4 cup cream
1 tblsp lemom juice
1/2 tblsp ginger garlic paste
1 tsp salt or to taste
3 tblsp ghee
METHOD
After 30 minutes give charcoal smoke in the pot by covering it for 3 minutes. Now place the pot on medium heat and boil the mutton with the marination till its tender ( approx 40 to 45 minutes). Keep mixing in between and set aside.
In a wok heat ghee and add all the whole spices and spices together with onion and cook well for 2 minutes.
INGREDIENTS
2 elaichi ( cardamom)
1/2 tsp blackpepper corns
1 cinnamon stick
1 bay leaf
1 tblsp green chilli paste
1 medium onion chopped
1 tsp coriander powder
1 tsp red chilli powder ( add to taste as there is already green chilli paste)
1/2 tsp garam masala
Add the cooked mutton and add:
1/4 cup milk
Fresh coriander leaves
Mix well and serve with roti or naan.
