INGREDIENTS
2 large eggs
1 3/4 cups sugar
2 heaping teaspoons cinnamon
1/2 cup oil
5 or 6 medium apples (I used Delicious)
2 cups flour
2 teaspoons baking soda
METHOD
Preheat oven to 350 degrees F. Â In a large bowl mix eggs, sugar, cinnamon and oil. Â Peel and slice apples and add to mixture and coat so as not to turn brown. Â Mix together the baking soda and flour and add to the ingredients in the bowl.
Mix well – this really works good with a fork – until all of the flour is absorbed by the wet ingredients. Â Pour mixture into a greased 9 x 13 inch baking pan or two 9 inch round pans. Â I used the 9 x 13 inch pan.
If you use the 9 inch round pans just remember this does not come out easily (if at all). Â You may have to just slice in the pan. Â Bake for approximately 55 minutes. Â Check regularly….mine was done a little earlier. Â Top with fresh whipped cream, if desired.
