INGREDIENTS
125 g butter
1 cup castor sugar
3 eggs
3/4 cup dessicated coconut
1 1/4 cup cake flour
1 tsp peppermint essence
1/4 tsp green food colour
2 tsp baking powder
2/3 cup milk
METHOD
Beat butter and sugar till pale. Add eggs one at a time. Add the coconut, essence and food colour.
Beat well.
Add the dry ingredients alternating with milk.add the baking powder at last.
Pour in a greased pan and bake at 180 degrees for 40 to 45 minutes or until done. ( insert skewer and if it comes out clean its done)
Decorate with chocolate ganache or butter icing
Ganache:
1 slab dairy milk chocolate
1 small tin dessert cream.
Mix and pour over cake. Top with grated mint chocolate.
