Dough :
INGREDIENTS
2 cups cake flour
1 tsp salt
1 tblsp sugar
1 tsp yeast
3 tblsp oil
Warm water +milk to bind dough
DIRECTIONS
Mix all ingredients well and bind dough with water and milk mixture. Knead for 2 minutes, cover and keep aside in a warm place for few hours.
Once it doubles in size punch down and roll into a big roti. Cut circles of equal size. Place on a duster tray and cover for 1 hour.
Cook on a non stick pan without oil. Wait till it puffs up and turn to cook both sides well. Slice from the middle carefully and add mayonnaise and tomato sauce spread then add chicken filling.
Chicken filling:
INGREDIENTS
3 tblsp oil
250 g chicken fillet cut in tiny cubes
2 tblsp ginger garlic chopped
3 green chillies chopped finely
Carrots cut in thin strips
Green pepper cut in strips
Handful of corn
1 onion cut in slices
2 cheese slices
2 tblsp milk
Salt and pepper to taste
1 tblsp chilli flakes
DIRECTIONS
Add oil in a pan. Saute ginger garlic and green chilli then add chicken cubes, salt and pepper . Cook till chicken almost done and changes colour. Add all the vegetables and mix well.
Add chilli flakes . Lastly add cheese slices and add 2 tblsp milk on the cheese and let it melt.
2 variations of filling : to one bowl of filling add 2 tblsp tandoori mayyonaise (optional)and mix well
To second bowl of filling add 2 tblsp plain mayonnaise and 2 tblsp of green chutney and mix well.
Fill in warm pitas and serve immediately
