The vegetables bring out all their aromas and flavors when sauteed for a few minutes in a pan with a little olive oil, and the turmeric gives them a kick without overpowering any of the flavors.
Boil 400g of whole wheat pasta in a pot of salted water and drain 2 minutes before the suggested cooking time. Keep 2 cups of the boiling water and pour over the pasta with 2 tsp. olive oil.
At the same time, while you are boiling the pasta, in a large pan, saute 300 g of broccoli florets, 1 red pepper and 1 yellow pepper in strips, 2 carrots in strips and 1 tablespoon of garlic melted with 3-4 tsp. olive oil. You add 1/2 tsp. turmeric, 1/4 tsp. sweet paprika, salt, a little pepper and 1 cup of water from boiling the pasta. You simmer until the vegetables are soft and if necessary you add a little more of the water. Transfer the pasta to the pan, mix and serve with some grated kefalotiri or the cheese you prefer… Simple!
