Fava beans are one of the most delicious legumes . You can serve it “married” with caramelized onions that give it incredible sweetness, but also with fresh onion or chopped dry onion and capers.
To boil fava beans, start by cutting 1 large onion into thick pieces and saute it in 3-4 tbsp. olive oil. Add to the pot 300 gr. fava beans, salt and pepper and continue sautéing for 3-4 minutes. You add 1 liter of hot water and let the fava beans simmer, stirring occasionally for about 40 minutes. Puree with the blender and mix with the juice of 1 lemon. For the caramelized onions, put in a non-stick pan 2 tbsp. olive oil and 500 g white onions in thin slices at a very low temperature, stirring until they begin to release their liquid.
Season with salt and pepper and if you want to make the caramelized onions a little spicy, add some bukovo or hot paprika or 1 small chili pepper. Cover with the lid and simmer until the onions soften well, about 40 minutes, uncover and add 1 kg. balsamic vinegar.
With the lid open, you leave their liquids to evaporate and store the caramelized onions in a sterile jar. They keep for 2-3 weeks in the refrigerator. You serve the fava beans with some caramelized onions and extra lemon juice and olive oil, if you like.
