Beat together 3 eggs with 6 tbs castor sugar. Add 1tsp vanilla. Beat till pale and fluffy. Add in 3 tbs oil. Gradually add in 11 tbs cake flour + 1 & 1/2 tsp baking powder. Mix well and add a dash of milk.
Heat oil on medium. Dip your hand in some water and carefully take dollops of the batter – using the side of the bowl create a ball and drop into the oil. Fry till golden – they should turn themselves.
Syrup:
1/2 cup regular sugar
1 cup water
1/2 a tsp butter
A pinch of saffron.
Boil till sugar has dissolved and the syrup has reduced a little.
Leave to cool till warm. Dip bajiyas in syrup and roll in desiccated coconut.
