Dry ingredients:
2 1/4 cups cake flour
1 1/2 cups sugar
1 tsp bicarbonate of soda
1 tsp salt
1 tsp cocoa
Wet ingredients:
2 eggs
1 cup oil
1 1/2 cups buttermilk ( i used curd)
1 tsp vinegar
2 tblsp red food colouring
1 tsp vanilla essence
Sift dry ingredients together. Add the wet ingredients and beat well for 3 minutes. Scoop in cupcake cases or in a cake pan and bake at 180 degrees for 20 minutes.
Frosting:
230 g cream cheese
1/4 cup icing sugar
1/2 cup whipped cream
Beat the cream cheese with icing sugar then add in fresh cream which has already been beaten stiff. Pipe roses on cupcakes and add cake crumbles on top.
