Buns:
Mix
3 cups flour
2 tblsp sugar
1/2 tsp salt
1 tsp baking powder
Mix in another bowl:
2 tblsp oil
1/2 cup warm water
1/3 cup milk
1 1/2 tblsp yeast
1 tblsp sugar
DIRECTIONS
Mix the wet ingredients into the dry ingredients add 1 egg and beat with a hook for 10 min. Add little more warm water if needed. Form it into a ball and let it rise for 40min /1h.
Roll the dough (neither thin nor thick), make cuts with the help of a round shape. Add a small rectangle of parchment paper in half of the circle, then fold it so that it becomes a moon.
Add your bamboo steamer on top of a pan with boiling water, then Carefully place the baos on top of a parchment paper.
Make sure water is not touching the baos. Cover and steam for 8 to 12 minutes. When they are done cooking, do not open the lid. Let it rest for 5 min before opening.
Chicken:
Marinate 500g chicken in big cubes or strips:
1 tsp garlic , ginger
Salt, pepper
1 tsp paprika
Red chilli paste
Soy sauce
Thai sweet chilli sauce, sriracha sauce
Lemon juice
1 egg
2 tblsp maizena mix together
Coat in crushed corn flakes and fry until crisp and golden.
Sauce:
2 tblsp Olive oil
Chopped garlic, 1 tsp ginger
2 tblsp butter
1 tblsp brown sugar or honey
Sesame seeds
Aromat
4 tblsp thai sweet chilli sauce
2 tblsp sriracha sauce
1 tblsp sriracha tabasco
2 tblsp ketchup
1 tblsp chilli
1 tsp fish sauce
1 tblsp lemon juice
Mix on low heat.
Toss the chicken into the sauce. Leave some to spread on the bao buns.
Assemble the buns with:
Sauce
Chicken with the sauce
Pineapple cubes
Purple onion
Whole red chilli slices
Chives
