Ingredients
250g nut butter (I used almond & walnut)
1/3 buckwheat flour
2 tablespoons honey
2 egg
1 teaspoon vanilla essence
pinch of salt
nuts to garnish
Directions
Combine nut butter, honey, vanilla and eggs and mix well. Add the buckwheat flour and salt and mix until combined. Make round cookies with your hands and press down onto a baking tray to flatten slightly.
The mixture is quite sticky so you’ll need to keep your hands wet. Place a half or some chopped nuts on top and press a little more for the nuts to stick. Bake for 25 minutes on 150. Allow to cool.
